My Favorite dish: Pacaya en huevo

This dish is a not so typical dish from El Salvador. I began to love this dish when my mom would make it when I was younger. She still makes it sometimes and I love when she makes this dish!!! My little brothers don't really like this dish so she really doesn't make it much anymore but when she does she makes them a potato the same way!!

The Pacaya is a vegetable in brine, and it kind of looks like an octopus. My mom begins the process by beating eggs until they are foamy in texture, and then she will stuff the vegetable with cheese, then coat them and fry them. She then makes a sauce that is made out of tomatos,peppers,and spices for color. All of that goes in the blender so that the sauce can be smooth and then she pours the sauce in a pan and then adds the pacayas. It is served with rice and a side salad which is optional. She also makes handmade tortillas to go along with it which makes it perfect!!!!
